When the sun shines there's nothing I love more than a refreshing co*cktail, even when you're not on holiday, with that first sip you can almost imagine yourself on that sun lounger soaking up the rays...even if it is your garden at the moment.

With the current lockdown restrictions meaning we can't go to the bar, the beach or on holiday as normal, DIY co*cktails at home are definitely the way to go!

I've always been a huge fan of co*cktails, much to my husband's dismay when we're out for drinks as they're usually on the expensive side of the menu but I just can't resist them!

However, making your own co*cktails is actually much cheaper than you would think and the ingredients are simple and easy to find, many of them you probably already have in your fridge or drinks cupboard.

With that in mind, Lidl Northern Ireland is inviting budding mixologists to toast the weekend in style with some simple to make co*cktail reciples.

Starting from just £2.50 per drink, you can whip up a fruity favourite following these easy recipes - shake up a Strawberry Frosé or stir up some passion with a Passionfruit, Peach & Mint Mojito.

When you can’t rely on the Northern Irish weather, there is no better way to get that summer feeling than with a delicious co*cktail.

The lovely people at Lidl NI kindly sent me some of these ingredients to try and I have to say these two recipes are now firmly on my list of favourites to make and so simple too!

I'm a huge fan of the classic Mojito so when I spotted the recipe for the Passionfruit, Peach and Mint co*cktail on my list I was excited to try it.

And I certainly wasn't disappointed, it was heavenly and I literally blitzed them together in minutes, I know my presentation isn't as spot on as the professionals, but I know it tasted good that's for sure.

These recipes to me are summer in a glass. The Strawberry Frosé was so moreish as well, just a quick tip and remember to leave it to freeze for a few hours or ideally overnight to get the best results.

So if you're planning a Zoom quiz night with co*cktails, it's best to prep the Frosé co*cktail the day before so it's perfect and just needs a little mix ahead of your big night in.

Here are all the ingredients and the methods you will need in preparation to make the two drinks:

Strawberry Frosé (serves 2)

  • Lidl’s Californian Zinfandel Rosé (£4.48 for 750ml bottle)

  • Strawberries

  • 1 lemon

  • 2 tbsp Caster sugar

  • Mint leaves to serve

1.Blend the rose with the strawberries, lemon juice and sugar.

2.Place into a tray and then into the freezer.

3.Allow to freeze for at least three hours, or overnight.

4.Once frozen, blend again, serve in glasses and top with fresh mint leaves.

Peach, Passionfruit & Mint Mojito (serves 2)

  • 70ml Liberté White Rum (£10.99 for 700ml bottle

  • 100ml Freeway Soda water

  • 2 peaches

  • 2 passionfruit

  • 1 lime

  • 2 tbsp Caster sugar

  • 3 sprigs of mint

  • Large handful of ice

1.Slice the peaches into segments, holding back 4 to garnish. Add the rest to a blender with the sugar and juice of half the lime. Blitz until smooth.

2.Dice the remaining half lime and add to the base of the glasses along with 3 small mint leaves per glass. Use a muddler to gently crush these.

3.Place the ice in a clean tea towel, fold or wrap to enclose the ice and bash. Fill the glasses halfway with the crushed ice.

4.Add the blender contents to the glasses along with the rum and the flesh of half a passionfruit in each, then stir.

5.Top each glass with soda and add a little extra crushed ice if needed.

6.Garnish by slicing the remaining passionfruit halves, peace slices and mint sprigs.
